    Silver93%
100% pinot noir; this wine saw 55 months of lees ageing in bottle before disgorging, 5g/L dosage. The colour is less overtly gold and more in line with the rosy hue of an old film painted in technicolour. It has some beautiful lactic characters, strawberry yogurt spooned atop poached quince and cinnamon stewed apples. Oatmeal notes lend a subtle earthiness, suspending the flight of fruit and giving this some extra depth. The texture of the bead is spot-on, enlivening and rejuvenating the senses with a thrum of lasting fizz.
